Not Paula Dean!

Today I got off work about 45 minutes earlier than usual. Since I got home I have been getting caught up on laundry and dishes (and blogs & emails-hee, hee). My husband and I eat out often. Since our kids have grown we have gotten in the habit of doing that and sometimes I just miss a good home cooked meal. I decided tonight I would cook!

I have had this recipe torn out and ready to try so tonight I decided to give it a go.

First, I had to check to see if I had chicken. Yes, I had boneless, skinless chicken breast tenderloins. That should work even though the recipe calls for bone in chicken breast halves.

Next, red onion. Nope not an onion in site. I did find some onion flakes...guess I'll use those.

New potatoes? Nope. But I did have Idaho Potatoes so I cut those up. Here is how it's looking so far.

Luckily I had baby carrots, just not fresh whole ones~ I have the mini one's that I use for Valentine's dog treats. She loves them and it keeps her girlish figure nice and trim. I think she was upset that I was stealing from her supply. Here is a photo of her watching me use her carrots. You can see the look of concern on her face. Too cute.


So I came this far and guess what one ingredient I didn't have?! Chicken Broth!!!!! Wow! I thought I had several cans of it but forgot I had made chicken and noodles a few weeks ago. But wait! I do have canned chicken and noodles so in it goes!
Guess we'll see what that turns out like! The other ingredients (spices) I had to substitute dried for fresh.

Well?

  1. When in need improvise! I love it! I'm sure you enjoyed a great meal - and Valentine's treats will surly be replaced. Mackey loves carrots too!
